Do not over mix the batter:

Many of us feel the more we mix the batter, the better will be the outcome. It might hold true for few food items, however, in case of muffins they are meant to be pillow-soft, light and airy. Thus when we over mix we might lose the fluffy texture. May it be a banana muffin or a pineapple muffin mix the dry ingredients to the wet ingredients only until they are barely combined.

Do not overfill the muffin cups:

After the muffins are baked completely, do not leave them in the hot pan to cool. Instead after it cools a little, shift them to a cooling rack. If you leave them in the hot pan the muffins might lose its moisture.
